›Is the end date included?

Not by default (from the 1st to the 2nd is 1 day). Tick “Include end date” to count both days.

›Do business days account for public holidays?

No, business days are all Mondays to Fridays. Subtract public holidays yourself.

›What happens if I add one month to January 31?

You get the last day of February (28th or 29th), because February 31 doesn't exist.
